It’s Getting Hot Out There

It’s another late post for me today. With the husband gone I’m not on much of a schedule. I’m enjoying sleeping in, hitting the gym and relaxing in the afternoon. I’m sure next week I’ll be back to a regular schedule.

Yesterday I mentioned I had a bit of a different day. Instead of sleeping in and heading to the gym I ended up getting up early for an appointment and then meeting my step-brother and his family so we could spend the day at Heritage Park.

Heritage Park is a first class tourist attraction and a year-round education, catering, and convention facility. Discover “How the West was Once” at Canada’s largest living history museum. Step back in time to our lively Historical Village. Meet friendly pioneers, ride our authentic steam train, enjoy the antique midway and immerse yourself in the old west.

It was a fun trip but the sun was out, it was 26 degrees and sweltering. After 3.5 hours of walking I was exhausted.

After I got home I was exhausted so I took a nap then got up to make dinner. I had another fun dinner planned but I was just so tired dinner ended up being super simple.

A ton of veggies (cucumber, yellow pepper and baby tomatoes) with some hummus,  along with goat cheese and cranberry goat cheese with crackers. Plus a huge sippy cupof water. It’s exactly what my body was craving.

I then spent the rest of the evening on the couch watching a little tv and talking to the husband.

Man, do I miss him. Only 2 days till he comes home 🙂


Bar Challenge

Tonight’s post is coming to you a little late. I had a busy day today but you’ll have to wait until tomorrows post to find out why.

Yesterday was a pretty chilled day. I decided to sleep in a little bit and when I finally got my butt out of bed the first thing I did was hit the gym.

Yesterday’s workout was a great one. It started with a 5 min warm up on the treadmill followed by a weight sesh (each of the following exercises were performed 3 times)

After the weights I hopped on the treadmill and did a short interval run walk.

  • 1 min @ 6.8, walk 1 min
  • 45 sec @ 7.0, walk 1.25 min (x2)
  • 30 sec @ 7.3, walk 1.5 min
  • 30 sec @ 8.5, walk 1.5 min

After the gym, I came home blogged and then headed to an hour long yoga class.

After all that exercise I was starving. Dinner last night was another winner. Mama Pea’s Noodle Salad with Peanut Mmmm Sauce.

Mine turned out a little more like a stir fry then a salad it was still delicious. I’ll be making this for the husband next week when he get back.

After dinner I spend some time in the kitchen doing a little baking.

I made Jenna’s (Eat Live Run) Double Banana Chocolate Chip Breakfast Bars.

These were good but I’d say a little too many chocolate chips. I’d cut them by a 1/3 next time I made them.

I also made Lynn’s (Lynn’s Life) Chocolate Peanut Butter Granola Bars.

These are ok but definitely not enough chocolate chip or peanut butter. I’d double those the next time. You can hardly taste them and the just crumbled apart when I cut them. They need more for everything to stick together.

Finally, I made a batch of my homemade granola bars.

I subbed the dried cranberries for dried cherries and it turned out wonderful. These are always my favourite bars not matter how much different types that I make.

That’s it. Since the husband is away I thought I’d pick up a few things I’ve been wanted for baking and such (cocoa powder, canola oil, etc) but hadn’t had a chance to get them.

I also wanted to share my dinner from last night. This is a MUST MAKE! It is so good.

Mediterranean Quinoa Salad.

I got this from Emily a few weeks ago and this is probably the third time I’ve made it. Honestly it’s that good. I follow her recipe exactly except I leave out the olives (since I’m not an olive fan). Last night I also topped it with a little feta.

Go make this now!!

And make sure to make extras. I think it’s even better cold the next day.

Canada Day Weekend

Happy long weekend everyone!

Happy Canada Day to all the Canadians out there…



And Happy 4th of July to all the Americans out there…



It’s been an interesting weekend for me. Friday the husband was feeling a little better so we headed downtown to enjoy some of the Canada Day activities.

This is the only pictures of the day I managed to take during the day. It was very crowded but a beautiful day. We just spend some time walking around and just enjoying the sun and the people.

We then stopped and picked up some Chinese food for dinner. No pictures but I had tofu with mixed veggies, mushroom fried rice and a veggie spring roll.

Saturday was basically spent running errands and such. Nothing too exciting.

Today, the husband had a early morning flight. He has left for Toronto for a week long work conference so I’m by myself this week. I dropped him off at the airport at 7 am and then headed out to do a little grocery shopping.

This week is going to be filled with yummy, veggie filled recipes. I can’t wait to share some of them with you. The day started with a trip to the gym and then since I had the entire day to kill I hit up four stores.

Costco, superstore, Community Natural Food (a organic/natural foods store here in Calgary)…

Since I dropped my last one a few months ago I’ve been dying to get another one.

This one has a removable inside so you can take it with you and it has your favourite drink already written down for them.

I’m not going to be using it for that (water consumption only) but it’s still a pretty cool feature.

I’m now at home about to have a chat with my mom and wait for the husband to call then I’ll make some delicious dinner.

Days Like These

Days like these:

  • I want to be excited that tomorrow is Canada Day and we have a long weekend coming up
  • That the sun is shinning and it finally feels like summer
  • That I just came back from the gym and ran 3 km (along with another 30 floors on the stairmaster)
  • That the kitty has decided to spend the afternoon curled up between my legs

Unfortunately, I’m just not in the mood. I’ve been in a funk all day and I just can’t seem to shake it off. I’ve tried many things including sleeping in, a green smoothie for breakfast, a long hot shower and even an afternoon trip to the gym didn’t help.

I’m hoping that cooking a nice healthy meal for dinner and curling up with a good book this evening will be the cure.

I’m also crossing my fingers that tomorrow I’ll be smiling and the husband will feel better (he is still at home sick) so we can at least get out and enjoy some of the Canada Day festivities tomorrow.

Sorry for the downer post – sometimes a girl just needs to vent!

Long Overdue

Over the May long weekend my dad and stepmom were in town so with them, the husband, my stepbrother, his wife and their 4 kids we headed to Kananaskis for the weekend.

Kananaskis is located between Banff and Canmore and is basically a beautiful resort that in the winter is located at the bottom of a ski hill. It’s in a valley surrounded by the Rocky Mountains. In the summer there are hiking trails, biking trails and every other outdoor activity you can think of. As you can imagine, it’s beautiful.

Next time hopefully it’s not raining so much so we can enjoy a little more of the area and actually get to do some hiking/biking trails.

Weekend Recap

This past weekend was a little crazy for me.

I worked on Friday – now I’m officially on summer vacation!!

Saturday we made the journey from Calgary to Edmonton (about a 3 hour car ride) to see West Edmonton Mall – there will be an entire post on this later on. About half way though out mall trip the husband started to feel sick. We left a little early and headed home so he could get some rest.

Sunday was a little slow. It was pouring out and the husband was really sick so I basically spend the day cleaning the house and looking after him.

Monday I was suppose to begin my hardcore exercise plan but we ended up spending the entire morning at the free clinic so the husband could see the doctor to get some medication for his strep throat. Yep, you heard me right, strep throat. Awesome!

So far so good on my catching it, I’m feeling great but the last few days I’ve been looking after him, cleaning, grocery shopping, lots of reading and other much need things. I did make it to the gym both Sunday and Monday but just not as long of a workout as I planned.

The worst part of him being sick is that he has a horrible cough. Last night he was up half the night coughing and I had a terrible sleep. I ended up sleeping in much later the usual so I haven’t accomplished as much as I had originally planned. Tomorrow he’s going back to work so I should be able to get back on track then.

Overall, things in the gym and food department have been going really well and it finally looks like it might be summer (at least for the next week or so).
